The problem with most guides is that the bios for most computers varies from board to board and that most inexperienced o/c's will struggle with the differences.
The old 775 was extremely easy to get a 25% o/c although the i5/i7 aren't hard, they certainly are a lil different.
I've always o/clocked to as far as a stock voltage allows me.

I just want someone to tell me what I need to set my Bios settings too.
I have a pdf from Gigabyte telling me how to test the hardware but the program they tell me to use easytune 6 won't run on x64 windows 7 and i got bored quickly after that!
Bfbc2 runs well with an avg of 85 fps stock which is fine.

the gigabyte manuals are rubbish. you are better off typing your motherboard number into google and add overclocking

Found this forum which has handy info on gigabyte mb's and some good overclocking tips. If you aren't sure on an overclock you can put up a post with your system details and I'm sure they will help you out.
